I would like to know if it’s possible to get the average “pageviews per visitor” per website category (Ecommerce, news, etc.).

Sorry Mauro, you can’t get this from HTTP Archive. HTTP Archive is a synthetic “Crawl” (bi-monthly) of top internet sites from Alexa. It is not any sort of collector for actual end user activity such as visits or hits per hour.
Google has a huge amount of data from GA, but AFIK they do not expose it.
Perhaps http://www.alexa.com/ or https://www.similarweb.com is what you want?
